Mugaritz is a restaurant in Errenteria, Spain with 2
Michelin stars. Chef Andoni Aduriz apprenticed at El Bulli. Mugaritz was voted
4th best restaurant in the world by Restaurant (magazine) in 2008, up from 7th
place in 2007. In 2011 the restaurant had climbed to the 3rd place. Aduriz uses
the term techno-emotional cuisine to describe applying science to cooking.
The name of the restaurant is from muga eta haritza,
Basque language for "the oak at the border" between Astigarraga and
Errenteria.
This restaurant is set in a traditional Basque
farmhouse surrounded by beautiful countryside. It has its own herb and
vegetable garden.
Andoni Luis is the head chef whose ideas and
inventions are innovative and creative. He has written many books and is at the
vanguard of Basque cuisine. You could say that Mugaritz is more than just a
restaurant. Its ideas around cuisine and the elaboration of dishes create a
philosphy where new creations and techniques are used to constantly discover
new flavours. Different combinations of herbs and spices are used in all of the
dishes.
